Banana Nut Muffins

Banana Nut Muffins ♥︎

THIS RECIPE DOES NOT REQUIRE A MIXER! ☺

Easy and healthy recipe! My mum loves it and wants me to bake more! We love bananas :)

Ingredients :
5 ripe bananas
80g of melted butter
150g of sugar
1 large and 1 small eggs
1 1/2 teaspoon of vanilla extract
1 tablespoon of expresso/strong coffee (Optional)
1 teaspoon of baking soda
A pinch of salt
165g of all purpose flour
1 cup of chopped walnut (toasted/raw)



Directions :

1. Preheat Oven to 180°C (350°F)
2. With a big baking spoon, mix butter into the mashed bananas in a large mixing bowl.


3. Mix in sugar, egg, expresso/strong coffee and vanilla extract.





4. Sprinkle the baking soda and salt over the mixture and mix in.
5. Add the flour and mix until it's just incorporated.

6. Pour in chopped walnuts and mix.


7. Pour mixture into a prepared muffin tin.





7. Bake for 25 - 30 minutes.

Oh I have also added decoration to the muffins but I have forgotten to take pictures of the end product.

Orange Chiffon Cake

As my dad mentioned that the twix oreo cheesecake I made was too sweet, I cut down the sugar by half for this orange chiffon cake. I am working towards a healthier choice! :)

Ingredients : 
8 eggs (small)
100g white sugar
A pinch of salt
1 tablespoon of orange sponge gel
70g orange juice
1 1/2 tablespoon of orange zest
100g all purpose flour
3 tablespoon milk powder
100g hot & melted butter

1. Crack 5 small eggs into a bowl. For the other 3 eggs, throw away the egg whites and use only the egg yolks.

2. Using a mixer at high speed, mix the egg, sugar, salt and sponge gel. Mix until fluffy!

Put aside your mixer (you do not need it for the following steps)

3. Pour in orange juice and orange zest and mix with big spoon.

4. Sift flour and pour it in slowly. At the same time, pour in 3 tablespoons of milk powder. Mix with big spoon.

5. Pour in hot and melted butter. Mix with big spoon.

6. Pour everything into the pan and put in the oven for 15 minutes - 20 minutes.

From step 3 onwards, DO NOT use a mixer.
Orange zest is very important as it adds more fragrance to the cake :)

Twix Oreo Cheescake

I apologize for the ugly appearance but it's the quality that matters, right? In my opinion, I think it's really nice and yummy (because I baked it) but the oreo is a lil burnt because I was playing with my dogs thus missed the timing.

(Please note : I have modified the recipe a lil bit)

Anyway, this is really easy!

To make the crust, you will need :
21 Oreos
1 tablespoon of sugar
1/4 cup of unsalted butter (Golden Churn)

To make the cheesecake batter, you will need :
1 pound of cream cheese (Philadelphia), softened
1/4 cup of sugar
1/2 teaspoon vanilla extract 2 large eggs, lightly beaten
1/2 cup sour cream
12 regular (I used regular because I want more chocolate hehe)/mini Twix chocolate bars

 Preheat the oven to 275 degrees F.

Ignore the extra egg and extra packet of oreo, just follow the amount of ingredients needed as stated above :)

Let's begin with the steps to making the oreo crust.

Grind the oreos into fine crumbs in a food processor.


Put the crumbs into a bowl...

And add 1 tablespoon of sugar and mix it

Add 1/4 cup of melted unsalted butter and mix it using a mixer (I think it's faster this way)

Transfer the mixed oreo with unsalted butter to an aluminum cake pan and make sure the portion is even out.

Put the aluminum cake pan aside and start making the cheesecake batter.

The steps to making the cheesecake batter.

(Medium Low Speed)
Using a mixer, mix 1 pound of cream cheese until smooth then pour 1/4 cup of sugar.
Add 1/2 teaspoon of vanilla extract.

Whisk 2 eggs and slowly pour in (mixer still on low speed)
Add in 1/2 cup sour cream and mix.

Chop about 12 mini Twix chocolate bars into small pieces (as shown below) and throw them into the bowl with the cheesecake batter.


Pour the whole cheesecake batter on the aluminum cake pan (with the oreo as base)

Bake the cheesecake at 275 degrees for 30 minutes.
Chill the cheesecake overnight.

I will be looking out for more healthy recipes and share with you guys :)

Yeah I have to look for healthy recipe because my grandma had diabetes (so my family has to be careful) and I don't want to bake fattening cakes/cupcakes/cookies.
